Snow pea dippers with herb aioli

A quick and refreshing summer platter. Sugar snap peas can be used in place of the snow peas.

Snow pea dippers with herb aioli


Serves 4

250g pack snow peas
¼ cup aioli [garlic mayonnaise]
2-3 Tbsp chopped herbs e.g. parsley, chives, tarragon


Snow peas may be blanched in boiling water.
Alternatively, wash and serve raw.
Mix aioli and herbs together.
Place in a small bowl to serve with the peas.

Variation: Use sugar snap peas or fresh New Zealand beans, blanched or raw.
