Spinach and mushroom pasta

A quick and tasty dish with spinach.

Spinach and mushroom pasta


Serves 4

200g pasta, e.g. penne, spirals, macaroni
1 Tbsp canola oil
1 onion, peeled and diced
2 cups baby spinach or spinach leaves
8-10 button mushrooms, quartered
2 Tbsp grated or sliced Parmesan cheese


Cook pasta following the packet instructions. Drain and keep warm.
Heat oil in a heavy-based frying pan, add onion and stir fry until tender.
Stir in pasta, spinach and mushrooms and stir fry until steaming hot.
Pile into a bowl and sprinkle with Parmesan cheese.

Suggestion: Use young kale leaves in place of the spinach.
