Stir fried Asian greens
This is a quick, easy and tasty way to enjoy bok choy.
4 bok choy, base removed
1-2 Tbsp capsicum and chilli chutney
Roughly slice bok choy stalks and leaves. Keep leaves separate.
Heat a wok or heavy-based pan. Spray with oil.
Add stalks and stir fry for 1-2 minutes. Add 1-2 Tbsp water and continue to stir fry until just tender.
Add leaves and stir fry until tender.
Add chutney, toss, and serve.
Variation: Add ½-1 tsp sesame or peanut oil in place of the chutney.
