Stir fried vegetables with bean sprouts
Adding bean sprouts to a stir fry gives some extra crunch.
1 Tbsp canola oil
1 onion, peeled and finely sliced
1 courgette, finely sliced
1 cup bean sprouts
white pepper, to taste
chopped parsley or mint garnish
Heat oil in a heavy-based pan.
Add the onion, and cook until translucent.
Add courgette, salt and pepper and stir fry until the courgette is tender.
Stir through the bean sprouts and heat through.
Place in serving dish, garnish and serve.
