Swede with lemon
This slightly sweet lemon sauce can be used on other vegetables such as parsnips, carrots, kūmara, turnips, pumpkin or yams.
1 swede, peeled and sliced into bite-sized chunks
1 Tbsp brown sugar
1 Tbsp canola oil
1 lemon juice, juice of and lemon rind, finely sliced
freshly ground black pepper, to taste
thinly sliced spring onion greens
Place swede, sugar, oil, lemon juice and rind, and pepper in a microwave proof dish.
Mix, cover and cook on high power for 4-6 minutes or until tender.
Stir once during cooking.
Serve garnished with spring onion tops.
Variation: Mix 2 spring onions, thinly sliced diagonally, through the swede before serving.
