Children, young and old, will enjoy these easy-to-make fritters - serve them as a light meal or snack.
3 cups (540g) sweet corn kernels (cooked, fresh or frozen)
1 red capsicum, deseeded and diced (optional)
4 eggs, beaten
½ cup self-raising flour (or use standard flour with 1 tsp baking powder)
freshly ground pepper to taste
3 Tbsp canola oil
Place sweet corn, capsicum, eggs, flour, salt and pepper in a bowl and mix.
Heat oil in a large frying pan.
Place spoonfuls of the mixture in the frying pan.
Cook until bubbles appear on the top of the mixture and the bottom side is golden.
Turn and cook the other side until golden brown.
Cook in batches and keep warm.
Serve with a green salad and tomato salsa.
