A tasty salad with Mediterranean flavours. Watch the video on how to make it.




Serves 4

1 cup bulgur wheat
1 cup boiling water
4 tomatoes, finely diced
1 cup chopped parsley
¼ cup lemon juice
¼ cup chopped mint
2 spring onions, finely sliced


Place wheat in a bowl and pour boiling water over. Cover and leave for 30 minutes.
When all water is absorbed, add tomatoes, parsley, lemon juice, mint and spring onions and mix.
Cover and refrigerate until ready to serve.

Variation: Add some chopped, pitted black olives for extra flavour.
