Tomato fiesta

Celebrate the taste of tomatoes with these three different types.

Serves 4

8 roasted tomato halves
12 cherry tomatoes, whole, halved or quartered
4 sundried tomatoes, diced
1-2 cups sliced lettuce leaves or salad greens
1-2 Tbsp balsamic glaze


Arrange lettuce on a platter.
Add tomatoes, and drizzle with balsamic glaze.

Roast tomatoes:
4 tomatoes, size of a golf ball
1 Tbsp balsamic crème
1 Tbsp chopped basil
pinch salt
freshly ground black pepper, to taste

Preheat oven to 200°C.
Lightly spray a baking dish with oil.
Slice the tomatoes in half and place cut side up on the baking dish.
Drizzle balsamic crème over tomatoes.
Sprinkle with basil and add salt and pepper.
Place in preheated oven and bake for about 15 minutes.
Remove from oven and serve.
