Full of flavour and a glorious coloured salad.

Tomato, roast pumpkin and onions


Serves 4

2 cups cooked, diced pumpkin
2 cups yellow tomato wedges
½ red onion, finely sliced
¼ cup basil or mint sprigs
2 Tbsp mandarin vinaigrette


Place pumpkin, tomatoes and onion in a serving dish.
Arrange basil on top.
Drizzle with vinaigrette and serve.
