Tomato Salsa

This simple tomato salsa is versatile and quick to put together.  Try it with corn fritters or battered fish and wedges. 

Tomato Salsa

Serves 4

4 large tomatoes, finely chopped
½ onion, finely chopped
¼ cup lemon juice or white vinegar
2 Tbsp canola oil
Pinch salt
Freshly ground pepper to taste

Mix ingredients together in a bowl, cover
Store in fridge until ready to serve

Serve with 
• Corn fritters
• Egg battered fish and wedges
