This simple tomato salsa is versatile and quick to put together. Try it with corn fritters or battered fish and wedges.
4 large tomatoes, finely chopped
½ onion, peeled and finely chopped
¼ cup lemon juice or white vinegar
2 Tbsp canola oil
freshly ground pepper to taste
Place all ingredients in a bowl and mix.
Cover and store in the fridge until ready to serve.
