Tomatoes, spinach and sardines on toast
Try this tasty combination of tomatoes and spinach with sardines for lunch or a light meal.
1 bunch spinach leaves
freshly ground pepper to taste
1 x 106g can sardines
1 Tbsp vinegar
4 slices toast
2 tomatoes, diced
2 tsp lemon juice
Wash the spinach, break off and discard the bottom of the stalks.
Place spinach in a saucepan with a little water. Place over a high heat with a lid on until wilted.
Remove from heat and drain well - squeeze out as much water as possible - use the back of a spoon .
Once drained, roughly chop and season with salt and pepper.
Drain the sardines and mash with vinegar.
Mix the diced tomatoes with the lemon juice.
Place spinach, mashed sardines and tomatoes on toast, sprinkle with more pepper and serve.
