Tuna and potato patties

Serve these patties with a salad for a quick and tasty meal. Keep some for lunch the next day. Watch the video on how to make them.


Tuna and potato patties


Serves 4

300g mashing potatoes, peeled and chopped
100g tuna in spring water, drained, flaked
1 egg, beaten
¼ cup dry breadcrumbs
1 spring onion, finely chopped
1 tsp lemon zest
2 Tbsp finely chopped parsley
canola oil spray


Place potatoes in a saucepan, cover with water and bring to the boil. Reduce the heat and simmer until potatoes are tender.
Drain, place in a bowl and mash. Cover and leave to cool.
Add the tuna, egg, breadcrumbs, spring onion, lemon zest and parsley and mix well.
Form into 8 patties.
Heat a heavy-based frying pan and spray with a little oil.
Add the patties in batches and cook until the base is golden brown. Turn and cook the other side until golden brown.
Serve hot with salad or steamed vegetables.
