Vegetable and chicken soup
This vegetable and chicken soup tastes great all year round!
8 chicken drumsticks
1 Tbsp oil
1 onion, diced
2 carrots, diced
2 potatoes, peeled and diced
2 cloves garlic, crushed
1 vegetable stock cube
1 L water
1 Tbsp vinegar
1 cup peas
1 cup sliced spinach or silverbeet leaves
Heat oil in a large saucepan.
Add drumsticks and brown all over.
Add onion and carrot and continue to cook until softened.
Add potatoes and garlic and cook briefly.
Add stock, water and vinegar and cook until meat is falling off the bone and the potatoes are cooked through.
Remove the drumsticks and take the meat off the bones then return the meat to the pot, discarding the bones.
Add peas, spinach or silverbeet and heat through for 2 minutes before serving.
Option: Use vegetable or chicken stock in place of the stock cube and water.
