Vegetable and dahl soup

A tasty vegetable soup with a twist – the taste of dahl.

Vegetable and dahl soup


Serves 2

1 Tbsp canola oil
1 onion, finely chopped
1 carrot, diced
1 courgette, diced
1 cup cooked dahl
2 cups water
pinch of salt
white pepper, to taste
2-3 Tbsp chopped parsley


Heat oil in a heavy-based saucepan.
Add onions and carrots and cook until just tender.
Add the courgettes and dahl and cook for a further 2-3 minutes.
Add the water and seasoning and simmer until all the vegetables are tender.
Serve garnished with parsley.
