Vegetable, chickpea and beef stir fry

Vegetable, chickpea and beef stir fry


Serves 4

3 Tbsp oil
200g beef stir fry
2 cloves garlic, crushed
1 tsp mild curry powder
1 tsp garam masala
400g can chickpeas, drained and rinsed
1 small red or brown onion, finely sliced
2 red capsicums, deseeded and finely sliced
2 stalks celery, finely sliced
2 courgettes, trimmed and sliced
4 cups baby spinach or chopped spinach
pinch of salt
2 Tbsp roughly chopped parsley
1 lemon, sliced in wedges


Place a large heavy-based frying pan over high heat and add a tablespoon of oil.
Add beef and cook quickly on all sides until browned.
Transfer to a warmed bowl, cover and keep warm. 
Reduce heat, add a further tablespoon of oil, then add garlic, curry powder and garam masala.
Stir with a wooden spoon for about 30 seconds or until spices are aromatic.
Add chickpeas and toss to coat with the spices. Add to the beef and mix well.
Add remaining oil to the frying pan and heat over a medium-high heat. 
Add onion, capsicums, celery and courgettes. Stir fry until vegetables are just tender.
Remove from heat. Stir through the spinach, allowing it to wilt in the residual heat.
Return beef and chickpeas to the pan and mix.
Season to taste.
Serve in warmed bowls, garnished with parsley and lemon wedges.

Variation: Replace courgettes with diced kūmara or pumpkin.
