An easy way to spice up your vegetables!
Serves 10 children or 4 adults
1 onion, peeled and chopped
1-2 Tbsp curry paste
1 cup peeled and diced red kūmara
1 cup peeled and diced pumpkin
1 cup water
1 cup lite coconut milk
2 cups chopped spinach
1 Tbsp chopped parsley or coriander
Spray a frying pan with canola oil, add onions and stir fry until clear. Add curry paste and stir fry 2-3 minutes.
Add kūmara, pumpkin, water and coconut milk.
Bring to the boil, reduce heat and simmer for 20-25 minutes or until vegetables are just tender.
Stir through the spinach and heat until wilted.
Serve garnished with coriander.
