Vegetable pasta salad with fish

This combination of vegetables with fish makes a fresh and delicious pasta salad.


Vegetable pasta salad with fish


Serves 4

¼ packet (125g) pasta shapes
2 carrots, grated
2 courgettes, grated
2 tomatoes, diced
1 avocado, diced (optional)
3 Tbsp lemon juice/vinegar
2 Tbsp canola oil
2 Tbsp canola oil
600g fish fillets

Half full a large pan with water and bring to the boil, carefully add pasta and boil for about 10 minutes until tender, drain and place in a bowl, cool.
Add carrot, courgette, tomato, avocado, vinegar and first measure of oil to the pasta.
Cover and refrigerate until ready to serve.
Heat second measure of oil in a large pan.
Lightly coat fish fillets in flour.
Add fish fillets to the pan a few at a time so the pan is not crowded. Fry until golden brown and remove. Repeat until all fillets are cooked.
Serve with pasta salad.
