Vegetables and potato cake
In China this is called Jian tudou bing.
2 medium roasting potatoes
¼ green capsicum
½ spring onion
1 Tbsp cornflour
salt to taste
lettuce and sliced tomato for garnish
Peel and grate potato and carrot.
Finely slice capsicum and chop the spring onion. Place in a bowl.
Sprinkle with cornflour and salt and mix well.
Heat a little canola oil in a pan. Add vegetable mixture and cook until golden. Turn and cook the remaining side.
Serve garnished with lettuce and tomato slices.
