Venison and kale

This one pot meal is very easy.

Venison and kale


Serves 4

500g New Zealand farm-raised venison mince
2 cups chopped seasonal vegetables – carrots, celery, onion
2 cups water
pinch salt
freshly ground black pepper, to taste
2 cups baby kale leaves, washed


Heat a heavy-based frying pan, spray with oil, add mince and stir fry until brown.
Add vegetables, water, salt and pepper.
Bring to the boil, reduce heat and simmer for 20-30 minutes, or until mince is cooked and vegetables are tender.
Add kale and simmer for a further 5 minutes.
