Warm winter vegetable salad

Ingredients

Serves 4

200g wholegrain rice
3 cups vegetable stock
6 Brussels sprouts, sliced
1 Tbsp olive oil
pinch salt
freshly ground pepper to taste
2 cups sliced cavolo nero or silverbeet
1 red onion, sliced
2-3 Tbsp walnut halves

Method

Place the rice in a large heavy based saucepan with the stock.
Cover, bring to the boil, reduce heat and simmer until all the liquid has evaporated.
Taste, add water if rice is not cooked, and continue cooking until rice is just soft.
Stir in the Brussels sprouts, oil, salt and pepper
Continue cooking until Brussels sprouts are soft.
Stir through the cavolo nero and red onion.
Serve with walnuts sprinkled on top.
