Watermelon icy treats

These are fun and fresh for the whole family to enjoy!

Watermelon icy treats

Ingredients

Makes 25

watermelon cuts (enough to make 600mL juice)
2 carrots
125g crushed pineapple, drained
½ cup rolled oats
½ cup lite coconut milk
cold water if required

Method

Using a spoon, scrape the watermelon flesh into the food processor. Discard the rind and use a spoon to remove the seeds. Blend to a juice.
Peel and grate the carrot and add to the watermelon juice.
Add the pineapple, oats and coconut milk. Process until combined. Add water to thin if required.
Spoon into ice block moulds or ice trays.
Freeze for about 2 hours or until mixture begins to set. Add wooden sticks if using. Return to the freezer until completely frozen.

Tips:
Watermelon should be firm and heavy, and the part of the melon that has been in contact with the ground is yellow. The ripe fruit sounds hollow when tapped.
Chill leftover mix and enjoy as a smoothie.
