Watermelon icy treats
These are fun and fresh for the whole family to enjoy!
watermelon pieces (enough to make 600 ml juice), seeds removed
2 carrots, peeled and grated
125g crushed pineapple, drained
½ cup rolled oats
½ cup lite coconut milk
cold water if required
Using a spoon, scrape watermelon flesh into the food processor. Do not use the rind.
Blend to a juice.
Add carrot to the watermelon juice.
Add pineapple, oats and coconut milk. Process until combined. Add water to thin if required.
Spoon into ice block moulds or ice trays.
Freeze for about 2 hours or until mixture begins to set. Add wooden sticks if using. Return to the freezer until completely frozen.
Watermelon should be firm and heavy, and the part of the melon that has been in contact with the ground is yellow. The ripe fruit sounds hollow when tapped.
Chill leftover mix and enjoy as a smoothie.
