White taro with coconut water and spring onions
A tasty starchy dish - ideal to serve with grilled meats and chicken.
1 white taro, peeled and diced
500 ml coconut water
2 spring onions, sliced
Place taro and coconut water in a heavy-based saucepan.
Bring to the boil, reduce heat and simmer for 30-40 minutes or until taro is soft. Add more water if required.
Drain, stir through spring onion and serve.
