Yam salad

Raw yams are crunchy and delicious - this tastes as good as it looks.

Yam salad


Serves 4

6 yams, finely sliced
1 carrot, grated
1 Tbsp chopped parsley
¼ cup pitted, sliced, green olives
10-12 pecans or walnuts
1 Tbsp avocado oil
pinch salt
white pepper, to taste


Place all ingredients in a bowl.
Stir to combine and chill.
Transfer to serving dish and serve.
