Yams with lime
Yams are plentiful in winter months and are delicious served with this tangy lime sauce.
400g yams, halved lengthwise
1 Tbsp brown sugar
1 Tbsp canola oil
1 tsp grated lime rind
2 Tbsp lime juice
freshly ground black pepper, to taste
2 Tbsp finely chopped herbs e.g. Italian parsley, coriander
Place yams, sugar, oil, lime rind and juice, and pepper in a microwave dish.
Mix, cover and cook on high power for 4-6 minutes or until yams are tender.
Stir once during cooking.
Before serving mix herbs through the yams.
Tip: Try this sauce on vegetables such as parsnips, carrots, swedes, kūmara, turnips or pumpkin.
