All aboard the Orient Express

The legendary journey across Europe to Istanbul has been a favourite in films and books. Today the Orient Express is best known for the London – Paris – Venice route, and makes the iconic six day trip to Istanbul once a year. Carriages have been restored to the glory of the 1920s and 1930s.

An executive chef presides over the menu which includes a Fennel and juniper berry compote served with cod fillets.

Fennel and juniper berry compote

Serves 4

10 ml olive oil
50g shallots, finely diced
500g fennel, finely diced
salt and white pepper to taste
5g juniper berries
1 Tbsp white wine
1 Tbsp cream

Heat oil in a saucepan, add shallots and sauté until tender. Add fennel and cook until soft, then add salt, pepper, juniper berries and wine.

Bring to the boil, reduce heat and simmer until reduced. Add cream and stir through.
