Chef Mikey Newland’s Caramelised tomato with 12 flavours and basil sorbet.

His menu inspired guests on a recent vegetables.co.nz forum-on-wheels. The menu showcased New Zealand grown vegetables beautifully.

Salad of pickled and raw vegetables with macadamia cheese and PX sherry
Scampi tortellini with courgette, basil, broccoli and pistachio
Seared duck breast with aubergine, garlic and radish
Caramelised tomato with 12 flavours (à la Alain Passard) with basil sorbet.


Chef Alain Passard is the highly respected chef of L’Arpege in Paris. Vegetables are the centre of his creations. He said “at L’Arpege, from being a side dish, vegetables have become THE dish. For me, this was a rebirth. The combinations are endless and amazing. With vegetables in the kitchen everything, absolutely everything, can be done.”
