Try stuffed mini vegetables on your menu

This plate of stuffed mini vegetables served at a Waiheke vineyard was amazing. There is a huge selection of small, baby or mini vegetables available to create attractive plates which are great to offer as a vegetarian option on the menu or as part of a main plate. Some suggestions:

  • Fill baby capsicums with spinach braised in butter and Parmesan and then bake.
  • Courgette drums are great filled and baked with finely diced red onion, chopped coriander, tomato and feta.
  • Roast baby eggplants filled with basil pesto.
  • Try baked mini kumara stuffed with goats cheese and walnuts.
