Barbecued Greens


The magic of the barbecue...  Not only is it great that the men take charge of the cooking, and the house is free of the cooking smell, but everything is much more fun to eat when cooked on the barbecue.

I was excited when the asparagus season started, but what a challenge it is to get children enthused on the ‘yucky green things’.  Until we put them on the barbecue.  Barbecued spears are a hit.  Put on every plate and more importantly, eaten off every plate.

It's quick and easy, doesn’t require pots or pans and best of all, nutrients are retained - you don’t lose vitamin C or B vitamins into the cooking water.

So next time you have a barbecue, try it.  Add a sparing drizzle of olive oil to the asparagus.  Once you have the barbecue at a high heat, cook the asparagus for 2-3 minutes or until they are the texture you prefer. The same can be done to corn.  And watch the enthusiastic consumption.  Enjoy!
