BLOG: Quick and Easy Lunch box ideas

I've been trying out some new ways to incorporate seasonal vegetables into the boys lunchboxes. One of their favourites has been Mini Pita Pizzas.

To make these preheat the oven to 180 °C. Mix a teaspoon of tomato sauce with a teaspoon of tomato paste and spread on a mini wholemeal pita. Top with 3 or 4 fine slices of courgette, red onion and capsicum. Sprinkle a tablespoon of grated cheese on top and bake in the preheated oven  for 10-12 minutes; until vegetables are soft and cheese has melted. Refrigerate until required for the lunchbox. My kids really like them cold.

I’ve used other vegetables and they have been just as popular, so try adding or substituting the ingredients above with sliced tomato, sliced eggplant, corn kernels, steamed broccoli florets or baby spinach leaves.

Another popular lunch box addition has been these Snack Sticks. Using toothpicks, skewer some cherry tomatoes, cubes of cucumber and carrot and you have instant mini vegetable kebabs. My boys like to have a couple of these for in their lunch box for morning or afternoon tea.

Last year I added a cube of cheese to the sticks- adding some protein turned them into a great lunch snack.
