Tasty Vegetable and dip combinations for the whole family

In our last blog we talked about a study which showed children are more likely to try new vegetables and/or eat more of a vegetable when paired with a dip. This has certainly been the case with my three, who are 5, 3 and 2.

I have been trying out a few new combinations at home recently, and the following two have been the biggest winners with all my kids.

Great as side dishes, they also make for healthy, hearty after school snacks.

Roasted cauliflower florets with cheesy dip

Makes 6 serves as side dish

1 large cauliflower, cut into florets
1 Tbsp olive oil
1 tsp sea salt
1 tsp smoked paprika

½ cup lite sour cream
½ cup lite cream cheese
3 Tbsp grated Parmesan
salt and pepper

Preheat oven to 180°C.
Place oil, salt and paprika in a large bowl. Add cauliflower florets and toss to evenly coat.
Spread cauliflower onto an oven tray, allowing a little space between each floret. Cook for 20-25 minutes, or until cauliflower is cooked and just starting to brown around edges. Cool and place on serving platter.
Mix dip ingredients together in a bowl, pour into serving dish and serve with cauliflower.
