Vegetable sandwices

Snacks can be quickly made using fresh New Zealand grown vegetables. From light bites like cherry tomatoes, to filled delights such as baked and stuffed potato or kumara. Keep a wide range of vegetables for snacks as well as for dinners, lunches and packed lunches.

Some snacks using fresh New Zealand grown vegetables:

  • cherry tomatoes
  • carrot sticks or baby carrots
  • celery sticks, either plain or filled with peanut butter or cream cheese
  • slices of cucumber or deseeded red capsicum
  • small pieces of cooked corn on the cob
  • mini pizzas made from pita bread topped with tomatoes and cheese
  • small stuffed kumara or potato (see recipe)
  • specially cut vegetable sandwiches for the younger kids, such as windmills.
Peanut butter and carrot windmills - image above: Spread bread with peanut butter. Remove crusts if desired. Make a 5 cm cut diagonally inward from each corner. Add a little pile of grated carrot, fold each alternate corner inward and across the filling to form a windmill shape. Secure with a slice of carrot or tomato.
