The 'not salad' salad

Rocket, Beetroot, Celery And Yellow Capsicum Salad_85750 I'm always looking to other mums for ideas to get children enthusiastic about vegetables.  I heard this one while having dinner with friends last night.  Mister 4 (and three quarters....) was telling me the foods he liked and disliked. "Eww salad, don't eat that".

"But you just had some on your plate and ate it?"

The reply was matter of fact. "That wasn't salad, that was lettuce and things."

His mother rolled her eyes and went on to tell me that whilst he refused to eat 'salad', if she started with lettuce and asked him to choose things to go with it, then she could generally get at least 3 vegetables into him. Sometimes the suggestions are a bit left field, but hey, just go with it (grated raw pumpkin anyone??).

At this time of year there is ample choice, especially if you add in various chopping options e.g. grated, sliced, diced....  For example

  • Asparagus
  • Spring onions
  • Carrots
  • Snow peas
  • Cucumbers
  • Capsicums
  • Red onion
  • Tomato
  • Broccoli
  • Cauliflower
  • Sweetcorn
  • Avocado
  • Courgette
  • Beetroot
  • Celery
  • Radishes.....
So, anyone with salad avoiders – try suggesting your children help you make ‘lettuce and things’.
