Whether you've been a parent for a while, or are pretty new to the whole experience, you will probably already recognise that children, even as babies, go through stages.

They may be great sleepers and all of a sudden they wake 3 times a night. Happy children, usually well behaved, suddenly turn grumpy and push boundaries..

Food, and eating habits can be one of the most frustrating 'stages' parents face.

In the next few blogs I'll give you some helpful tips and tricks to help keep your child's diet healthy, and full of nutritious fresh New Zealand grown vegetables, through these often trying times.

In the meantime, here is one of my boys’ current favourite lunch box additions. Great as either a mini muffin or a slice, it is a perfect snack or lunch for the whole family, and packed full of fresh vegetables.

6 eggs

1 1/2 cups self raising flour

2 courgettes, grated

1 carrot, grated

1 brown onion, finely diced

4 large broccoli florets, roughly chopped

1 small kumara, grated

150g bacon, diced

1 cup grated cheese

2T vegetable oil

salt & pepper to taste

Preheat oven to 180°C. Grease and line a 30 x 20cm baking tin. (If making mini muffins 2 x 12 mini muffin trays)

Beat eggs in a large bowl, add flour and mix well.

Squeeze excess moisture out of courgettes and add to egg and flour. Add remaining ingredients and mix thoroughly.

Pour into baking tray and place in oven for 30 minutes, or until cooked through. Leave in tin for 5-10 minutes before turning out.
