Chicken salad with harissa dressing

4 medium chicken breasts, cooked and sliced
4 cups salad leaves
20 black olives, pitted and halved
1 red onion, peeled, halved and sliced into thin wedges lengthwise
8-12 slow roasted tomatoes [see our recipe]
60 ml lite olive oil
½-1 Tbsp harissa paste [see our recipe]
1 Tbsp cider or white vinegar
freshly ground black pepper, to taste
Place chicken, salad leaves, olives and onions into a bowl.
Mix dressing ingredients together and toss over salad.
Divide onto plates, add tomatoes and serve.
