This delicious salad can be served as a main dish or as an accompaniment.
2-3 mini cos lettuce
2 spring onions or shallots, sliced
1 x 185g can of tuna in spring water, drained
8 anchovy fillets, drained
12 black olives, pitted and sliced in half
4 hard-boiled eggs, peeled and quartered
6-8 small sprigs of basil or parsley
4 medium tomatoes, sliced into wedges
100g small green beans, freshly cooked and sliced
2 cloves garlic, peeled and crushed
2 Tbsp white wine vinegar
½ cup lite olive oil
freshly ground black pepper, to taste
Place lettuce leaves on serving plates.
Add rest of salad ingredients.
Make dressing by placing garlic, vinegar, oil, salt and pepper into a jar with a lid and shaking.
Pour over salad just before serving.
