Tomato pasta sauce with tuna

Add canned tuna to fresh pasta sauce to make a delicious meal.

Tomato pasta sauce with tuna


Serves 4

1 Tbsp canola oil
½ red or brown onion, peeled and sliced
4 medium tomatoes, chopped
1 red capsicum, deseeded and chopped
¼ cup tomato sauce
¼-½ cup water
pinch salt
freshly ground black pepper, to taste
1 x 400g can tuna chunks in spring water, drained and flaked
4-8 cups cooked hot pasta
2-3 Tbsp chopped parsley


Heat oil in a heavy-based saucepan. Add onion and cook until transparent.
Add tomatoes and capsicum and simmer for 2-3 minutes.
Add tomato sauce, water, salt and pepper. Simmer for 4-5 minutes until piping hot. Add the tuna and stir through.
The sauce needs to be of a spoonable consistency.
Place hot pasta in serving bowls and spoon over the sauce.
Garnish with parsley and serve.
