Vegetable and bean burgers

These yummy vegetarian burgers make an easy and nutritious meal.



Vegetable and bean burgers

Serves 4

1 x 400g can butter beans, drained and rinsed
2 carrots, grated
2 courgettes, grated
1 clove garlic, crushed
2 eggs, beaten
½ cup dry breadcrumbs
1 Tbsp canola oil
4 wholemeal burger buns
4 Tbsp tomato sauce
1 lettuce, sliced
2 tomatoes, sliced

Mash beans in a bowl.
Add carrot, courgette, garlic, eggs and breadcrumbs to the mashed beans.
Heat oil in large frying pan over medium heat.
Place tablespoons of mixture into the frying pan a few at a time.
Cook until golden brown, turn and continue cooking until cooked through.
Serve in burger buns with tomato sauce, lettuce and tomato.
