Kūmara pizza bases

A delicious pizza base or flatbread and top with your favourite vegetables.

Ingredients

Serves 4

1 cup cooked and mashed kūmara
1 cup natural yoghurt
3 cups self-raising flour
Pinch of salt
Drizzle of olive oil. 

Extra flour for dusting.

Method

Mix kūmara and yoghurt together in a large bowl until thoroughly combined.
Add remaining ingredients and mix to form a soft dough, adding 1 Tbsp water as needed.
Divide the dough into eight even-sized balls and dust a clean work surface and rolling pin with flour
Roll each ball into a pizza base, roughly 3-5mm thick
Heat a dry, non-stick pan over a high heat
Cook each base for roughly two minutes each side, taking care not to char
Top the cooked kūmara flatbread with your favourite pizza toppings and bake for 5-10 mins in a hot oven, as you would a traditional pizza.
