Noodles and vegetable snack

This is great for serious after-school munchies.

Ingredients

Serves 3

2 cups boiling water
1 x 85g packet 2 minute noodles
1 cup grated courgette
1 Tbsp Hoisin sauce
1½ cups mung bean sprouts
1 cup carrot sticks

Method

Pour boiling water over noodles and courgette in a bowl.
Allow to stand for 5 minutes. Drain well.
Add the Hoisin sauce, mung beans, carrots and gently toss.
