Artichoke spread

This is a handy spread to add to platters with crackers.


Makes 1-2 cups

1 x 400g can butter beans, drained and rinsed
¼ cup light olive oil
2 Tbsp lemon juice
¼ cup finely chopped artichoke flesh or heart
pinch salt.


Place butter beans in a bowl and mash with a fork.
Add oil, juice, artichoke and salt.
Cover and store in refrigerator.
Serve with crackers.

Tip: add more lemon juice to taste.
