Cauliflower and tuna macaroni cheese

Cauliflower, corn and peas with tuna give this macaroni cheese recipe a healthy makeover.


Serves 4

¼ packet [125g] macaroni pasta
½ cauliflower, sliced into bite-sized pieces
1 x 440g can creamed corn
½ cup milk
½ cup grated cheese
1 cup peas
1 x 400g can tuna in spring water, drained
¼ cup grated cheese


Preheat oven to 200°C.
Place macaroni in a saucepan of boiling water and boil for 8 minutes.
Add cauliflower to pasta and boil for a further 3 minutes. Drain and set aside.
Mix creamed corn, milk and cheese together in a bowl.
Add peas, tuna, pasta and cauliflower to the corn mixture.
Place in a large roasting dish and sprinkle with second quantity of cheese.
Bake in preheated oven for approximately 30 minutes or until hot through and golden on top.
