Beetroot, carrot and apple salad

Try serving this salad with barbeque chicken and corn, or in a lettuce leaf.


Serves 4

2 beetroot, peeled and grated
3 carrots, peeled and grated
2 apples, grated
¼ cup orange juice
¼ cup oil
1 tsp paprika
¼ tsp ground cumin

Tip: try adding one grated celeriac for a different flavour.


Toss together grated beetroot, carrots and apples in a large bowl.
In a separate small bowl mix the orange juice, oil, paprika and ground cumin. Make sure there are no lumps of spices in the dressing.
Pour the dressing over the salad and toss to combine.

Serving suggestions:
• with a cheese and tomato toasted sandwich
• with barbecue chicken and corn
• in a lettuce leaf.
