Braised fennel with carrot

The distinctive fennel flavour is extra tasty combined with carrot and orange juice.


Serves 4

6-8 baby fennel (or 1-2 large fennel)
½ cup carrot juice
½ cup orange juice
1-2 Tbsp julienne (matchsticks) carrot






Preheat oven to 180°C.
Trim leaves from fennel and place bulbs in a baking dish.
Add the carrot and orange juice.
Place in preheated oven and cook for about 20 minutes or until fennel is tender.
Serve sprinkled with carrot julienne and a little of the sauce.
