A quick and easy meal for anytime of day. Try adding spinach, tomato and mushroom too.
1 tsp canola oil
½ cup cooked frozen peas
2 Tbsp grated cheese
1 Tbsp chopped parsley
salt and pepper
chopped parsley, for garnish
½ cup chopped baby spinach
1 small tomato, chopped
chopped, cooked bacon
Beat eggs, salt, and pepper in a bowl.
Heat oil in a small frying pan over medium heat.
Add eggs and allow to cook for 30 seconds, stirring a little.
Place peas, cheese, parsley, spinach, tomato, and bacon if using, in a line across the middle of egg mixture.
When egg is cooked enough to fold, gently fold one half over the filling.
Continue to cook on that side for another 30 seconds then turn over and cook on the other side for a further 30 seconds.
Garnish with parsley and serve.
