Roast garlic

Roast garlic mashed is sweet & nutty, delicious spread on crusty bread.

Ingredients

3 bulbs of garlic
1 tbsp olive oil
pinch of salt 

 

 

 

Method

Preheat oven to 180°C.
Slice the top off each bulb of garlic.
Place uncovered in a baking dish and drizzle over the olive oil. Sprinkle with salt. 
Bake in preheated oven for about 30 minutes or until soft.
Remove flesh from skin, mash and serve with crostini (toasted French stick)

Variations:
Wrap garlic in oiled aluminium foil.
Place cut side down to roast.

Tip: Squeeze the bulbs out of the head of garlic and mash with olive oil and store in the refrigerator.
