Shallot and coriander dressing

Try this over various other vegetables.


Serves 4

1 cup sliced, peeled shallots
½ cup chopped fresh coriander
¼ cup olive oil
pinch salt
freshly ground black pepper, to taste
2 peeled, destoned and sliced avocados


Mix shallots, coriander, oil, salt and pepper together in a bowl.
Serve over sliced avocado accompanied with crusty bread.
