Spinach with sultanas and pine nuts

A delicious combination.

Ingredients

Serves 2

1 Tbsp canola oil
2 Tbsp chopped fresh parsley
1 x120g bag baby spinach
3 Tbsp sultanas or currants
4 Tbsp pine nuts
pinch salt
freshly ground black pepper, to taste

Method

Warm oil in a heavy-based frying pan.
Add pinenuts and parsley and stir fry for 2-3 minutes over a medium heat, being careful not to burn the nuts.
Add spinach and sultanas.
Stir fry until heated through and well mixed and spinach is glossy.
Serve immediately.

Season to taste and even sprinkle a little lemon juice.

Tips:
This dish goes well with a couple of added chopped anchovies. Stir fry with the parsley and pinenuts.

It can be enjoyed on it's own, as a side dish, or even stirred through cooked pasta.
