Watermelon, rocket and smoked chicken salad

A satisfying lunch or light meal that's refreshing and super tasty.


Serves 4 

1   smoked chicken breast - thinly sliced
4   spring onions - sliced on diagonal
Half a watermelon - chopped into cubes
100g rocket
100g leafy greens or baby lettuce
1 small handful beansprouts
1 handful of toasted pistachios - shelled and roughly chopped

60g Bocconcini (or fresh mozzarella) 


½ cup plain yoghurt
2 Tbs olive oil
1 Tbs lime juice
10g mint leaves (1 small bunch)


Prepare the salad ingredients and layer into a salad bowl adding the watermelon last and just before serving. This will ensure your salad doesn’t wilt from the juice of the melon.

Top with bocconcini if using.

To prepare the dressing finely slice mint leaves and combine with other ingredients. Season to taste and drizzle over the salad.
