Beans, celery, cucumber and melon salad

A refreshing salad that is so easy to make.

Beans, celery, cucumber and melon salad


Serves 4

20-25 green beans, trimmed and sliced into 1-2 cm slices
2 stalks celery, thinly sliced on the diagonal
½ cucumber, deseeded, thinly sliced
¼ prince or rock melon, peeled, deseeded, sliced into chunks

1 tsp lemon juice
1 tsp sugar
1 Tbsp lite olive oil
2 Tbsp chopped mint


Blanch beans in rapidly boiling water for 2-3 minutes.
Remove and cool in iced water or under cold running water. Drain well.
Mix beans, celery, cucumber and melon together in a bowl.
Pour dressing over the salad before serving.

Dressing: Blend lemon juice, sugar, olive oil and mint together.
