Capsicum, cucumber and Udon salad
Tasty, different and yummy.
1 x 200g packet Udon noodles, cooked and drained
1 green capsicum, deseeded and sliced
½ telegraph cucumber, deseeded and sliced
¼ fresh pineapple, diced
1 Tbsp water
2 Tbsp rice vinegar
½ tsp minced chilli
½ tsp grated or minced ginger
1 Tbsp peanut or sesame oil
1 Tbsp chopped coriander
Place noodles in a bowl, add capsicum, cucumber and pineapple.
Place water, vinegar, chilli, ginger and oil in a lidded jar and shake vigorously until well combined. Drizzle over salad and toss gently.
Place on a serving platter and garnish with coriander.
